Ingredients-
1 1/4 cups dried prunes, chopped
1 1/4 cups dried figs, chopped
1 1/2 cups raisins
1 1/2 cups dried cherries, chopped
1 1/2 cups dried cranberries, chopped
1 cup butter
1 cup dark brown sugar
1 1/4 cups molasses
1/2 cup brandy
2 oranges, juiced and zested
2 1/4 cups pecans, divided
1 tablespoon allspice
2 teaspoons cinnamon
2 teaspoons powdered ginger
1/2 teaspoon cloves
2 teaspoons nutmeg
3 eggs
1 3/4 cups all-purpose flour
3/4 cup finely chopped almonds
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/4 cup rum
Steps-
In a saucepan, melt the butter over medium heat and add the dried fruit, brown sugar, molasses, spices and orange juice and zest. Bring to a boil and then turn down to simmer for 15 minutes. Remove from heat and allow to cool.Preheat oven to 300 degrees and grease a 10-inch springform pan. Whisk the eggs into dried fruit mixture. In a separate bowl mix together the flour, baking powder, baking soda and salt. Stir in the almonds and then fold in 1 1/2 cups of chopped pecans. Slowly add the dry ingredients to the dried fruit mixture. Pour into prepared pan and decorate the top with pecans. Bake for 1 1/2 to 2 hours. Poke holes in the top of the cake and pour the rum over the top. Wrap and store in a cool place. Serve and enjoy!
