Introduced in the new Emperor expansion, "On the Rhodes Again" is a difficult achievement where you are required to start as the Knights and core Constantinople, Antioch, and Jerusalem. This was the focus of this Ironman campaign - which is actually available to watch on this channel - along with the "King of Jerusalem" achievement. Both were achieved mid-16th century.
After that, I just expanded somewhat aimlessly, trying to learn the new balance of 1.30. I learned pretty quickly that the new 90% autonomy threshold for territories is a massive nerf to sprawling empires and makes it much harder to ramp up through sheer conquest. Unfortunately, the new "governing capacity" mechanic wasn't any help, either; it took me very little time to hit the soft cap, which made future conquest even more costly. I built state houses and court houses in almost every province and I still kept exceeding the cap. Unless I'm missing something, I think world conquest must be much harder in 1.30 unless you're prepared to ignore the soft cap and accept huge core cost and aggressive expansion penalties.
My biggest power spike came in the 18th century when I embraced my role as the economic hegemon. This isolated me somewhat diplomatically, but reduced territory autonomy to 70% and - when fully embraced - granted another 20% governing capacity. This allowed me to core several new states and reap huge benefits from my numerous territories. Had I been able to hit that power spike sooner, I might have been able to conquer another third of the world.
There's clearly a lot I need to learn in the Emperor expansion. Still, for a OPM start, I'm pretty satisfied with how this turned out.
